Coos Bay Library has teamed up with Coos Head Food Co-op's Outreach Coordinator, Jamar, to  provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Monthly Event: Every Fourth Thursday!

*This month, we meet on 3rd Thursday to avoid holiday

For this month’s recipe, our special guest chef, Black Market Gourmet's Jardin Kazaar, will be featuring Holiday Carrot Soufflé. Scroll down for ingredients.

Holiday Carrot Soufflé Ingredients:

10 nice fresh carrots (Bulk Carrots in our produce department)
1 pint Heavy Cream
3-4  whole eggs (Co-op features a 4 egg carton so you don't have to invest in a dozen)
1 C sugar or (to taste)
1 Tbsp Vanilla (Co-op has this in bulk so you can take as much or as little)
1 tsp Cinnamon
Salt

(tiny pinch of salt to balance out the sugar)

Directions:  Cook the carrots in boiling water until tender. Drain and set aside.  Now use your blender to puree all ingredients to a nice thick consistency.  ( This will take several loads in your blender )  Start with carrots,  then add the eggs and cream.  When blended, pour into a large bowl and add salt, sugar, vanilla and cinnamon.

You will need:
1 Pot for Boiling the Carrots
If you do not have a blender you can also use a masher for this part as well.
Strainer to drain Carrots
2 Big Bowls
Casserole Dish (Baking Dish)
1 Big Spoon
