Coos Bay Library has teamed up with Coos Head Food Co-op's Outreach Coordinator, Jamar, to provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Coos Head Holiday Noshes ingredients:
World’s Best Mash
6-7 Potatoes (Yellow, Red or Russet Potatoes) Also it is your choice to peel the potatoes, I am choosing a mixture of Yellow and Red potatoes.
¼ Teaspoon of Garlic Powder (1/2 tablespoon if you would like to use fresh chopped garlic)
¼ Teaspoon of Onion Powder
¼ Teaspoon of Black Pepper
Salt
1 Bunch of Rosemary (finely chopped if measured would be ½ tablespoon)
1 cup of Heavy Cream (if you use more potatoes then you can add more heavy cream, but we are starting with 1 cup until we get a consistent texture)
½ Stick of Butter or ¼ cup of Butter
**Garnish with finely chopped Green Onions or Parsley
Coos Head Brussels
4 Cups of Brussels (cut the Brussels Sprouts in half and remove the stems)
1 cup of Vegetable Stock
½ cup of Onions
2 Tablespoons of Chopped Garlic
½ cup of Chopped Walnuts (Roast for 6 minutes in the oven at 400 degrees before chopping)
1 Lemon
2 Tablespoons of Sesame Oil
¼ Teaspoon of Black Pepper
Salt
Olive Oil
**Garnish with finely chopped Green Onions or Parsley
