Coos Bay Library has teamed up with Coos Head Food Co-op to provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!
Monthly Event: Every Fourth Thursday!
For this month’s recipe, Spirituality Teacher & Mentor, Tara Cridland, will be making Pumpkin Curry with Rice.

Pumpkin Curry with Rice ingredients:
Canned pumpkin
Canned coconut milk
Regular Curry: (bulk) $.99 oz / Organic curry: $1.29 (16cc 3 scoops from the bulk aisle)
Salt
Vegetable broth
Rice
Garlic
Onion
Example of ingredients, but can exchange for any bean or veggie of your Choice!
Ginger
3 small Potato
2 small carrots
Peas or Beans of choice
**optional** A little sweet added - This allows the curry flavor to “pop” a little more but is not necessary if wanted to limit your sugar intake (sugar, agave nectar, coconut sugar, etc) price range $3-$10.
What’s needed to make recipe:
Pot with lid to cook rice.
Deep Sauté pan or wide pot to cook and hold curry and vegetables.
Cooking Utensils such as spatula, large spoon for stirring and sautéing.
