Coos Bay Library has teamed up with Coos Head Food Co-op to provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!
Monthly Event: Every Fourth Thursday!
For this month’s recipe, OSU’s Registered Dietitian Nutritionist, Stephanie Polizzi, will be making Curry Quinoa & Corn Salad.

Curry Quinoa & Corn Salad ingredients:
Curry Quinoa:
1 cup quinoa (multi-colored)
1½ Tbsp oil
2 yellow onion
1 tsp turmeric
1 tsp coriander
(Note: can use 1 Tbsp curry powder instead of turmeric and coriander)
1 Tbsp fresh ginger root
1 tsp cinnamon
¼ tsp salt
1¾ cup low sodium vegetable broth
1 package frozen peas or 2 cups fresh
½ fresh green chili chopped
Fresh garlic, minced
1 carrot, 1 stalk celery, 2 red pepper
Corn Salad:
2 bags frozen corn (Steph likes the cook in the bag type)
1 red onion
1 pkg grape tomatoes
1 large cucumber (can substitute with chayote if you can find it)
3 Tbsp apple cider vinegar
3 Tbsp olive oil
½ tsp salt
½ tsp pepper
½ cup fresh basil leaves
