Torte’s Signature Sugar Cookies 

Ingredients:
Cookies:
1 cup butter, softened
½ cup sugar
1 egg
2 teaspoons almond extract
¼ teaspoon salt
2 ¼ cups flour

Royal Icing: 
2 tablespoons meringue powder
1 teaspoon almond extract
1 teaspoon vanilla extract 
2 cups powdered sugar
3-4 tablespoons warm water 
Food coloring 

Directions:
Preheat oven to 325 degrees. Make the cookie dough by mixing butter and sugar on low speed until they cream together. Add egg, almond extract, and salt. Slowly incorporate flour. Chill in the fridge for one hour. Lightly flour a cutting board and divide dough into two balls. Roll first ball until it’s 1/8 inch thick. Cut into fun shapes, place on baking sheet, and bake at 325 degrees for seven to eight minutes or until the cookies are golden brown.

Allow cookies to cool completely. While cookies are cooling make the royal icing by whisking meringue powder and powdered sugar in a mixing bowl. Slowly add in extracts and water and beat on high speed for 3 minutes or until the icing is smooth. Pour icing into a variety of bowls and add drops of food coloring or food gel. Dip cookies into icing and let set for 20 to 30 minutes. Grab your favorite cup of tea or coffee and enjoy!
