Coos Bay Library has teamed up with Coos Head Food Co-op to provide safe, easy, and healthy recipes to create at home. Join us virtually on Zoom for this fun community event!

Monthly Event: Every Fourth Thursday!

For this month’s recipe, Coos Bay Library's own, Gene, will be featuring: FRENCH COTTAGE PIE.

French Cottage Pie ingredients:

Yellow Onion - 2
Mushrooms - 8-10
Carrots -1
Peas - 1 small bag
Red Wine (Appel Cider Vinegar 1 cup)- 1 cup
Beef Broth – (Vegetable broth 1 cup)- 1 cup
Tomato Paste- 2tbs
Flour- ½ cup
Butter- 1 stick (Possibly 2 sticks)
Yellow Potatoes - 4
White Potatoes - 4
Cheese (Optional any hard cheese) - 2cups (Possibly 3)
Milk (Olive Oil .5 cup)- 1 cup
Beets-3-4
Garlic- 4-6 cloves
Balsamic Vinegar- ½ cup
Salt and Pepper- Taste
Sugar-1 Tsp
Paprika- 2 Tsp

OPTIONALS
Arugula or any other leafy green
Beef bouillon cube

PREP
2 pots, 1 small pan, 1 oven proof baking dish, 1 baking tray.
(Optional, whisk, cheese grater, ricer)
Peel Potatoes and Beets.
Cube the potatoes into small squares, and cube the beets into large chunks.
Place both in separate pots with cold water and bring both to a boil and then reduce heat to medium until fork tender then remove from heat.
